2015 Wilyabrup Chenin Blanc 

Northern Margaret River


Hand-picked from 30 year old vines and de-stemmed to open-fermentor. Fermented on skin for 9 days and basket pressed straight to old barrels, where the wine finished primary fermentation. Malolactic fermentation was allowed to occur and was stopped based on taste. The wine was barrel aged for 10 months, during which the barrels underwent battonage every two weeks. The wine was then removed from barrel, clarified and bottled.

2014 Karridale Grenache Noir | Syrah | Viognier | Malbec

Southern Margaret River


Hand-picked parcels of fruit, from a variety of vineyards, was destemmed and fermented as whole berries, each batch being kept separate. The Grenache parcel had 10% of the stalks added back to the ferment. All batches spent approximately 12 days on skin, after which they were basket pressed straight to barrel where they completed fermentation. The parcels were then barrel aged 14 months, during which time the barrels underwent battonage every four weeks. The wine was then blended from barrel, clarified and bottled.
